Ingredients:
1/4 cup and 1 tablespoon of vegetable oil
2 tablespoons of honey
1 tablespoon of soy sauce
1/2 teaspoon of onion powder
2 cloves of minced garlic
2 tablespoons of chopped cilantro
2-3/4 skinless, boneless chicken breast halves-cut into1 inch cubes
1 half of a small onion, cut into 2 inch pieces
1 half of a bell pepper, cut into 2 inch pieces
1/2 tablespoon of kosher salt
1/2 teaspoon of black pepper

Directions:
1. In a large bowl, whisk together oil, honey, chopped cilantro, soy sauce, onion powder, minced garlic. Reserve 1/4 cup of marinade before adding chicken. Pound out the chicken breast (helps chicken to cook evenly). Season chicken breast with kosher salt and pepper, then cube chicken. Place chicken cubes in the marinade and refrigerator for at least 2 hours.2. Preheat the grill for high heat.
3. Thread chicken and vegetables and alternate onto the skewers, and discard the used marinade.
4. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, or until chicken juices run clear. Turn and brush the reserved marinade frequently.
